We slowly braise the quality lamb shoulder for four hours with a garlic infused vegetable medley and then add the tomatoes to provide a bit of tang to the gravy.   The rosemary and thyme provide the perfect herbs for this shepherd's delight.   We spoon this mixture into a shortcrust base and then top it with fluffy potato before adding the piece de resistance of cheddar cheese on top which melts into the potato.
